R2L uses fresh ingredients from local sustainable farms outsourced from Zone 7, a fresh distribution service that connects farmers and chefs. Zone 7 picks the highest-quality ingredients from New Jersey and Eastern Pennsylvania farms and delivers them to restaurants.
A few of these local farms, which include Blue Moon Acres, Tuscarora Organic Growers and Blooming Glen, provide high-quality, locally produced certified organic food. Breakaway Farms, a frequent weekly destination for Chef Stern, is R2L’s source for grass-fed, nutrient-dense lamb and pork.
In the summer of 2013, R2L hosted its first Summer Harvest Series. Each week R2L featured a different ingredient and composed four courses centered on that ingredient. The ingredients, produce from local farmers, included: carrots, summer squash, plums, corn, tomatoes, fava beans and melon. For the last dinner of summer, The Grand Finale Dinner, R2L hosted all of the local farmers involved with the Harvest Series and was able to include all of the produce featured throughout the summer. It was a great opportunity for the farmers to have the chance to dine with us and enjoy the dishes that were created using their fresh seasonal produce.
